Day 2, Mission: Compost Cookies -363 recipes to go

Today is Sweet-tooth day! I used to be one to choose salty savory snacks over sweet treats. But that all changed when I met my boyfriend. Now I find myself craving cake or ice cream in the middle of the day. To help satisfy that craving I decided to make Compost Cookies. This is a simple recipe from Regis & Kellys Website that uses what ever left over goodness you happen to have around your house. I modified it a little to adjust to what I had around the house.
Yields: 12-18 cookies
Total Time: 30 minutes
# of Pans: 2
Ingredients:
1 cup unsalted butter (2 whole sticks)
1 cup granulated white sugar
3/4 cup light brown sugar
1 tsp vanilla extract
2 large eggs
1 3/4 cups all purpose flour
2 tsps baking powder
1 tsp baking soda
2 tsps salt
1 1/2 cups your favorite baking ingredients (chocolate chips, Raisenettes, Rollos, Cocoa Krispies etc) *I     used Raisenettes, Yogurt covered raisins & White Chocolate Chips
1 1/2 cups your favorite snack foods (chips, pretzels, etc.) * I used lots and lots of pretzels
Directions:
*If you are using chips, pretzels or any large ingredient you need to crush it up. The easiest way to do this is to add the ingredients to a large zip lock bag, close and roll over with a rolling pin
After Crushing

* In a stand mixer cream butter and sugars on medium high for two to three minutes until fluffy and pale yellow in color.

*Turn down to about a medium speed and add eggs and vanilla

*Increase mixing speed to medium-high and start a timer for 10 minutes. The mixture will become an almost pale white color and your creamed mixture will double in size. Scrape down the sides of the pan to make sure all the ingredients are getting mixed
* After 10 minutes, turn down to a low speed and add the flour, baking powder, baking soda and salt.Mix for just about a minute
*On the same low speed, add your favorite baking ingredients and mix for 30 - 45 seconds until they evenly mix into the dough. Then Add in your favorite snack foods for another 30 - 45 seconds until those too are evenly mixed in.

*Scoop out even spoonfuls of the dough onto a well greased cookie sheet. Leave about 1 to 1.5 inches between the cookies

*Cover the cookies tightly with saran wrap and let sit in a refrigerator for at least one hour. This will allow them to keep their shape while baking
* After an hour preheat your oven to 400' on the middle rack

* Bake your cookies for 9-11minutes or until golden brown

*Allow Cookies to cool and then indulge in all the goodness of these compost cookies!
*For an even more delicious treat (yes, it can get better than this) serve a la mode. Warm with a scoop of your favorite ice cream...mmmm mmmm mmmm mmm YUM!
